Receiving Frozen Products:

When you receive a food item marked “Perishable,” open it immediately and check its temperature. The food should arrive frozen, partially frozen or at least refrigerator cold.

One or more lobsters I've received isn't moving at all. Is it still alive?

The short answer is maybe but not to worry. It can be difficult to tell the difference between a dead lobster and simply a sluggish lobster after being shipped.  If the lobster's shell is cool to the touch, chances are its still alive but very sluggish. We recommend cooking the lobster as soon as possible. When the lobsters are done cooking, their tails will be curved, not straight. Once cooked the tail meat should be just as firm as the rest. If the meat is spoiled, it will be watery, loose and mushy. If the lobster's tail is both straight and the meat is loose, then the lobster shouldn't be eaten and it should be discarded.

If you do receive a lobster that does not cook up properly, please take photographs of the product and email us the pictures.

What’s safe to eat on my Lobster?

  1. Are the eggs inside the tail edible?

Yes. But make sure the eggs are RED, if the eggs are black, it means your lobster is not cooked enough. Cook the lobster until the eggs turn RED!  “lobster caviar,” are delicious and fine to eat.

  1. What about the green stuff  (tomalley)?

Yes it is safe to eat. Tomalley is the liver of the lobster, it is located between the tail and the body. Many people love it and consider it a delicacy.

  1. What is the white stuff on the lobster meat?

That is the fat from the lobster, which can stick to the meat. It is normal and can be eaten or discarded. If you’re preparing cooked lobster meat for later, a great way to remove the fat is by placing the cooked meat in a bath of salty water and gently rubbing it off.

  1. What about the shell?

Well I guess you could eat the shell but it is not recommended.  You can use the shell to make a nice lobster broth.

Aren't lobsters supposed to be red?

Yes, but only after cooking them do they turn a gorgeous red. A live lobster's natural color is dark orange, dark green and brown. Like our Logo, Blue lobsters are very rare.

How long will a lobster live out of water?

Our lobsters are selected for their hardiness, but they should ideally be prepared the same day you receive them. If the lobsters are active, you can save them in the refrigerator for the next day by wrapping them in damp newspaper. DO NOT submerge them in tap water – it will kill them since they live in salt water.

Handling Live Lobsters

When you get your delivery do not take the lobsters out of the carton to play with them, remember they are delicate. Open the carton to inspect them, but do not remove them from the carton.

Depending on the conditions you may want to add some wet newspaper and additional ice packs to the carton. This will help to keep the lobsters moist and cool. But do not immerse them in fresh water they will die. The lobsters CANNOT live in fresh water. And if you have room, refrigerate the entire carton right away. The lobsters must be kept cool, remember they come from the cold waters of Maine.

I can’t eat my Lobsters right away what should I do

If for some reason you find that you are not ready to eat your lobsters for several days, you may partially cook them and then keep them in the refrigerator. Simply place the lobsters in boiling water for six minutes, and then remove them. Refrigerate the lobsters right away.

Fill stockpot half full of water and add the packet(s) of sea salt. Bring water to a rolling boil. Carefully place lobster head first into boiling water. Lobsters will make a high pitched noise when they enter the pot. Don't worry, this is just gas escaping from the lobsters shell. Boil lobsters according to table below.

Christmas time is the busiest shipping time of the year, we strongly suggest placing your order early – two weeks before Christmas would be ideal. Better yet, if you are sending a gift—send a gift certificate—and don’t worry about the last minute delivery rush!

If you want to ship the last ten days before Christmas, make sure the recipient will be home/work when you plan to ship them our luscious lobsters. Remember the last week before Christmas people travel and businesses may be closed. This is important because you are sending a perishable food product.

If you are ordering frozen seafood like our lobster tails, lobster bisque, or chowder, order them early and keep them in your freezer.
